Chickpea Blondie

Ingredients
- 1 can chickpeas, drained and rinsed very well
- ½ cup peanut butter
- 3 T. honey
- 2 T. packed brown sugar
- 1 tsp. vanilla
- ¼ tsp. baking powder
- ¼ tsp. baking soda
- 1/3 cup chocolate chips
- Preheat oven to 350F.
- Generously spray an 8X8 inch square pan with nonstick cooking spray.
- Add half of the drained and rinsed chickpeas to the food processor and process until smooth.
- Once smooth, add the remaining chickpeas and ingredients EXCEPT chocolate chips. Process until smooth and well combined. If needed, use a spoon to scrap the sides to combine all ingredients.
- Fold chocolate chips into batter and then pour into greased pan. Use a spoon to press evenly into pan.
- Bake for 20 minutes, or until edges are golden brown and fork inserted into batter comes out clean.
- Let cool for 20 minutes, then cut into 9 pieces.
